We had an absolutely magnificent stay in Fitou in the red apartment from Christine.
We were only there for four nights, but that gave us plenty of time to explore the surrounding area, including a trip to the lovely beach town of La Franqui (a ten minute drive away), the beautiful surrounding mountains, and of course wandering the lovely town itself.
As for the apartment, it was right in the middle of Fitou with an excellent view of the castle, and came with everything we could possibly want for our stay, from pans to cutlery to espresso machine (with coffee!).
Our only problem was parking, but that was entirely our fault for bringing a 6 metre long van onto small village streets! Christine was more than helpful though, pointing out where we could park that would be easiest. Also, the welcome bottle of wine was much appreciated :D
I can highly recommend this apartment for a couple looking for a spot to stay in the region away from the madding crowds of the beach side resorts with easy access to all the sights of the area, the wine, and for cycling in the surrounding countryside.
